Ginger Beer – A Caribbean Christmas Favorite

Ginger beer

To make ginger beer, steep ground ginger, pimento and cinnamon in boiling water overnight. Strain the mixture, sweeten to taste and refrigerate. Serve chilled over ice for a refreshing and tangy drink.

  • 3 £ ginger fresh chopped
  • 12 pimento whole
  • 3 cinnamon chopsticks
  • 2 gallons water
  • 3-4 £ Sugar crushed
  • Preparation

  • In a deep pot, put two liters of water to boil.

    2 liters of water

  • Add freshly grated ginger and 12 whole pimentos.

    3 kg of ginger, 12 pimentos, 3 cinnamon

  • Remove from heat and let the mixture steep overnight.

  • Strain the ginger mixture into a saucepan, discarding the solids except the pimento.

  • Sweeten to taste.

    3-4 lbs Sugar

  • Pour the mixture into bottles and refrigerate.

  • Serve with ice.
